Recipe: smoky pulled chicken

This is one of my go-to recipes when I can’t think of what to make for guests. Or when I have shredded chicken in the freezer from when I needed the bones for broth.

I usually make the recipe from a whole chicken, but I’m sure chicken breasts would work just as well.

  • 1 1/2 Tbsp. smoked paprika
  • 1 tsp. cumin
  • pinch of red pepper or cayenne
  • 3 garlic cloves, minced
  • salt and pepper to taste
  • 3 Tbsp. extra-virgin olive oil
  • 1 lemon or lime, juiced

Mix ingredients and stir with:

  • 1 lb. chicken, cooked and shredded

Allow to marinate several hours. Sear in a frying pan before serving. Great for chicken tacos or as a salad topper.

  1. Hello Trish! How are you doing? I so enjoy your blogs! Hope all is going well for you! I’ve been seeing that Spain is having a lot of flooding, is that affecting you at all? I hope not! We are doing well over all. I’m scheduled for a rotator cuff surgery the end of November, I’m not looking forward to that… but that is the way it goes. Elizabeth turned 25 today, so we had a birthday party with mainly the ladies and kids from our family this morning, David and my dad were here too. It was nice. We had gotten together last week for Abigail’s birthday too. Now Sunday will be Keturah’s 16 th birthday… so we lab to have the family over in the afternoon for that. Elizabeth was just out to Illinois a week ago and spent Friday-Monday morning out there and stayed with Steve and Lois. She met up with a lot of different people, it had been a long time since she had been out there. It was good for her to go back and visit. We are having a cool rather rainy dreary fall day, makes for a cozy night to be in- almost makes a person ready for the wood stove! I’m really not quite ready for that yet though! Summer just went way too fast!!! We had only 1 or 2 campfires… not usual. The farmers are starting to harvest… so I guess winter is on its way….😊 I hope you have a wonderful week!
